Spring and Ceviche are Here

Spring means ceviche for the Carlier’s and this week meant shrimp ceviche. North Carolina shrimp and fresh chilled tomato gazpacho to be exact. My favorite part about living in North Carolina is how incredible and fresh the seafood here is from oysters and grouper to beautiful shrimp.

We used head on shrimp so we could make broth for risotto and other dishes. Laura is already planning how she will use all the broth we got from the ceviche.

We ate delicious food, shared it with amazing friends and that means I get to share the recipes with you here. When we weren’t keeping busy in the kitchen we were fixing our patio netting (no more wasps wandering and getting trapped!) or playing with our very busy son.

These days it seems like everything is rushing around, trying to remember it all, and making sure there’s enough time for our family and appreciation for all these moments that are going by so fast.

I don’t know how or when but I’ve slowly started to re-learn how to live and enjoy life like this lay off somehow taught me what a life of family could be like if I am willing to let my guard down and stop worrying it’s all going to disappear tomorrow. I’m not living that kind of life anymore though it’s not always easy to remember. I feel it most when I’m with my family, with Laura, sitting in the sunshine, or enjoying a delicious iced cold latte from a local favorite.

May this next week bring more opportunities and reasons to be grateful.
